The best book I have found covering this topic is Anne L. Macdonald's 1988 No Idle Hands The Social History of American Knitting Ballantine Books, NY.
Also good is Susan M. Strawin's 2007 Knitting America A Glorious Heritage from Warm Socks to High Art, Voyageur Press, St.Paul, MN.
